Maitake is a sought after, delicious, soft-fleshed polypore with excellent nutritional and medicinal properties. It attracts considerable attention from the nutriceutical and pharmaceutical industries, especially in Japan, Korea, and the United States.
Towards the stem base, the flesh is thick and dense, and is better sliced. The upper petal-like caps are better chopped. They can be prepared in many ways. Simply slicing and sautéing is simple and straightforward. It can also be baked and stuff with shrimp, sliced almonds, spices, and topped with melted cheese. Dried Maitake can be powdered and used to make a refreshing tea.
