ABOUT
This mushroom has a mellow and attractive flavor when young. They grow in large clusters and best picked in a small to medium size, otherwise the stems can get stringy. When finely chopped and stir-fried, cooked ina white sauce and poured onto a fish or chicken, or baked in a stuffing, this species imparts a mild but satisfying, pork-like flavour.
NUTRITIONAL CONTENT
Not known, although closely related species produce unique antibiotics.
